Mixing Mission with Market: How Aaron Cole Built a Culinary Community in Jackson

In the world of startups, we're often told to focus on the "bottom line" from day one. But for Aaron Cole, the founder of DoughNation Bakery and The Melted Grill, the bottom line wasn't a number--it was a neighbor.

DoughNation Bakery didn't start in a boardroom; it started with a surplus of bread and a desire to help. Aaron's original goal was simple: bake bread and donate the proceeds or the product to those in need. However, the community's response was so overwhelming that the "project" quickly demanded the structure of a business.


"I didn't set out to be a bakery owner," Aaron shared during the episode. "I set out to solve a problem." This mission-first mentality created a brand loyalty that most startups spend years trying to manufacture.


Transitioning from a donation-based bakery to a full-service eatery like The Melted Grill brought on a new set of challenges. Aaron discusses the learning curve of moving into a commercial kitchen space, managing a team, and maintaining the "soul" of the brand while scaling operations.


The Melted Grill has become a staple for comfort food in Jackson, known as much for its gourmet grilled cheese as it is for its welcoming atmosphere. For Aaron, the two businesses are two sides of the same coin: providing nourishment and community connection.


During the conversation, Aaron highlighted three pillars that helped him navigate the transition from hobbyist to business owner:

  1. Authenticity is Magnetic: When your community knows you actually care about them, they become your biggest advocates. You don't need a massive marketing budget if you have a massive heart for your city.

  2. Iterate on the Fly: You don't have to have everything figured out to launch. Aaron learned the logistics of the food industry by doing, failing, and adjusting in real-time.

  3. Find Your "Why": On the hard days--and there are plenty in the restaurant world--Aaron points back to his original mission of giving back. That "why" is what keeps the oven running.
